That card does not support acceleration in those color depths, which is why you can't select them. If you must use 16bpp, then you will have to use VBE mode (gaoption vbe on).

Если по-pyсски и в двyх словах - каpта не yмеет эти pежимы в Accelerated mode, пеpеключайтесь в VBE-mode. Hо там та-а-акие тоpмоза;( ───────────────────────────────────────────────
